TIPS FOR MAINTENANCE

To maintain a knife in its optimal state it is necessary to take care of it to the maximum following some simple maintenance tips so that, over the years, our knife remains as new

  • Wash knives immediately after use. Avoid prolonged contact with food debris.
  • Use a neutral or slightly alkaline detergent.
  • Do not use bleach, soda or detergents that contain chlorine or free chlorides as they corrode the steel or eat the original luster.
  • Avoid rubbing knives with abrasive products or scouring pads as well as metal or synthetic cleaners.
  • Wash knives immediately after use. Avoid prolonged contact with food debris.
  • In the dishwasher place the knives with the leaves facing down, in baskets separated from the rest of the crockery and cutlery, thus avoiding any friction.
  • Do not leave the knives submerged for a long time in water, especially in the case of hard water or saline water that affects the metal.
  • Immediately dry cutlery with soft absorbent cloths.
  • Drying the dishwasher is usually not enough to prevent corrosion.
  • Finish drying the parts after the drying cycle with a cloth.
  • Try not to leave the cutlery inside the dishwasher too long.

TIPS FOR SHARPENING A KNIFE


Keeping sharp knives with the sharpener and the use of sharpeners will help us to keep the knives ready for use as the first day

  • The most advisable thing is the periodic use of chairas or steels for the maintenance of the edges of their knives.
  • Protect your fingers.
  • Place the blade of the knife and the shawl at an acute angle (20º).
  • The arm that holds the shawl should not move, and the other hand will lightly support the blade on the shawl and slide it on it maintaining the angle.
  • Repeatedly swipe the blade of the knife over the shawl.
  • Sharpen the other side of the blade repeating the same sides of the movement, this time on the other side of the shaft.
  • The ideal is to alternate the passes of the edge with the chaira, to get a perfect symmetry on one side without loading the other.
